Clean Eats: Guilt-free Waffles!

Good grief, my hands hurt.

Yesterday’s workout was all about grip strength. We had to do 6x hang power cleans, 100ft of dumbbell farmer carries and 10 pull-ups = 1 round. This was a 20 minute workout, so you go all out and do as many rounds as you can. My trainer, we’ll call him Quadzilla (see picture below), decided I needed to use 65lbs for the cleans (UM.) and 55lb each dumbbells (WTF.) and to do kipping pull-ups with the smallest band (Very little help). All this topped off with his comment that he’ll “take it easy on me for another week or so”. Dear lord, please help me.

I knew when I changed gyms I’d be challenged and that has turned out to be very, very true!  But I’m grateful for the kick in the ass push and can already see and feel a difference in my abilities (and abs!). Even so, this workout was harder than expected, mostly because of my lack of grip strength. The dumbbells were so heavy that I was basically bent-knee running with them across the floor. The pull-ups tore my hands, YET AGAIN, but this time it was only the left hand. Here’s a lovely photo if you’re curious… don’t worry, it isn’t too gnarly! It’s no worse than a nasty blister you could get from yardwork or shoveling snow. They just take a few days to heal over and I have to be careful to keep it clean. But let me tell you… BAD WORDS when I have to shower the first time. BAD WORDS. Time to look into some of these or these.

Now that I’ve grossed you out with my yucky hand, let’s move onto food! 😀

I don’t think it’s hard to understand that when eating mostly Paleo, one can tend to miss all things bready/carby. This morning I woke up craving waffles, so I pulled out the trusty waffle maker and dug up my prized recipe collection of my favorite Paleo waffles. I really love the Sweet Potato Waffles  opted for the Plain Paleo Waffles created by The Petite Athleat. 

Without further ado, here is the genius concoction for amazingly filling, delicious, guilt-free, gluten-free, dairy-free Paleo Waffles!

Paleo Waffles
Grain-Free, Sugar-Free, Dairy-Free
Makes 6 waffles

  • 3 whole eggs, organic
  • 1 tbsp coconut oil, melted (or bacon grease)
  • 1 small, well-ripened banana, frozen, then thawed and mashed
  • 1 cup egg whites
  • 1/3 cup Almond Breeze, unsweetened Vanilla
  • 2 tsp vanilla
  • 2-3 drops of NuNauturals liquid stevia, or sweetener of choice (to taste) Peach note: I omit this.
  • dash of cinnamon and nutmeg
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 cup coconut flour

Throw everything in a blender and blend for about 30 seconds until well-incorporated. Cook to waffle iron directions.


I made Waffle Bites!

My favorite toppings for these are PB2 “syrup” and fresh fruit. If you don’t know PB2, you should. It’s essentially powdered peanuts with much of the fat content extracted. It’s only 45 calories and 1.5 fat grams per 2TBSP compared to 16g fat and close to 200 calories for full-fat PB! I like being able to mix PB2 with almond milk to the consistency that I like…whether it’s thicker to dip apples in or thinner to use as a syrup. My local store (Kroger) carries PB2 regular and chocolate flavors. Jeez, they should sponsor me! 😀

  2. Where does one find coconut flour? Does it work the same way as regular flour? Color me intrigued…

    • My grocery store (Kroger) carries it in their organic/gluten free section. The brand I use is Bob’s Red Mill. It doesn’t behave the same as regular flour and takes some trial and error… or just follow the recipes it’s in closely! It really just acts as a binder to hold things together. I use it in my salmon cakes, crab cakes, brownies, etc.

  3. These waffles look really yummy. I’m really tempted to go buy a waffle maker to do so. :)
    I really like all the recipes you share. I don’t cook meat, but they inspire me to tweak them a bit and try something new. I’m actually going to try making the Paleo breakfast cupcakes for a friend tomorrow for brunch. I’ll let you know how they turn out. :)

      And thank you so much! I love that I can give you ideas to play with! Perhaps I should do a clean eats post with meatless or meat alternative. I’m thinking Thai coconut curry w tofu? :)

  4. I want waffles.

    So, I’ve always fancied myself a pretty strong person. I carry around my 45lb kid, I routinely change 5 gallon jugs of water, I used to lug 50lb bags of dog food around and I could lift my 65lb dog. But running around with a 55lb dumbbell in each hand? I feel like a weak little girl right now.

  5. Ouchie! I hope your hand gets better soon. I have that problem too, having the heavier weights slip out of my hands (although heavy for me is lighter than what you are talking about!). At least you had some waffle goodness.
